Ingredients

  • 1 box chocolate cake mix
  • 1/2 cup coconut oil or butter, melted
  • 1 cup water
  • 3 eggs
  • 1 cup shredded coconut (sweetened)
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup powdered sugar
  • 1/2 cup pink frosting (or whipped cream)
  • Extra shredded coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Mix together the chocolate cake mix, melted coconut oil, water, and eggs until combined.
  3. Pour the batter into your prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  4. Let the cake cool completely in the dish.
  5. Combine the shredded coconut, sweetened condensed milk, and powdered sugar in another bowl.
  6. Spread this mixture evenly over the cooled cake.
