2 large Eggs
3.4 ounces Pistachio instant pudding mix
17.5 ounces Betty Crocker sugar cookie mix
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, cream together the softened butter, eggs, and pistachio pudding mix until smooth and well combined.
Gradually blend in the sugar cookie mix, stirring until a sticky dough forms.
Spread the dough evenly in a greased 10×15-inch baking sheet using a spatula to smooth the surface.
Bake for 10-12 minutes or until the edges are lightly browned and a toothpick inserted in the center comes out clean.
Allow the cookie bars to cool completely before cutting them into squares.
Notes
You can use any sugar cookie mix you prefer, but Betty Crocker works particularly well for this recipe.
If you want a stronger pistachio flavor, consider adding chopped pistachios to the dough.
