Pistachio Pudding Sugar Cookie Bars are a delightful sweet treat that combines the rich flavor of pistachio pudding with the soft texture of sugar cookies.

Ingredients

Scale
  • 1/2 cup Butter, softened
  • 2 large Eggs
  • 3.4 ounces Pistachio instant pudding mix
  • 17.5 ounces Betty Crocker sugar cookie mix

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, cream together the softened butter, eggs, and pistachio pudding mix until smooth and well combined.
  3. Gradually blend in the sugar cookie mix, stirring until a sticky dough forms.
  4. Spread the dough evenly in a greased 10×15-inch baking sheet using a spatula to smooth the surface.
  5. Bake for 10-12 minutes or until the edges are lightly browned and a toothpick inserted in the center comes out clean.
  6. Allow the cookie bars to cool completely before cutting them into squares.

Notes

  • You can use any sugar cookie mix you prefer, but Betty Crocker works particularly well for this recipe.
  • If you want a stronger pistachio flavor, consider adding chopped pistachios to the dough.
  • For a festive touch, add a sprinkle of powdered sugar on top after they cool, or drizzle with white chocolate.
