4 cups cooked chicken, shredded
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup chicken broth
1 tablespoon poppy seeds
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 cups crushed buttery crackers
1/2 cup melted butter
1 cup shredded cheddar cheese
Instructions
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, chicken broth, poppy seeds, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Transfer the chicken mixture to a greased 9×13 inch baking dish, spreading it evenly.
In a separate bowl, mix the crushed crackers with melted butter until the crackers are well coated.
Sprinkle the buttery cracker mixture evenly over the chicken mixture in the baking dish.
Top with shredded cheddar cheese.
Bake for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
Notes
Can substitute rotisserie chicken for the cooked chicken for added convenience.
For a lighter version, use low-fat sour cream and reduced-fat cheese.
