A delicious and crunchy snack made with crisp corn cereal and pecans, coated in a sweet caramel mixture.

Ingredients

  • 1 box (12 ounces) crisp corn cereal (like Crispix)
  • 2 cups pecan halves
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Combine cereal and pecans in a large bowl.
  3. In a saucepan, melt butter, stir in brown sugar and corn syrup, and bring to a boil. Boil for 2 minutes without stirring.
  4. Remove from heat and stir in vanilla and baking soda.
  5. Pour caramel over the cereal mix and toss until evenly coated.
  6. Spread onto the baking sheet and bake for 1 hour, stirring every 15 minutes.
  7. Cool completely, break into clusters, and store in an airtight container.
