Delicious and nutritious sweet potato boats filled with savory spiced meat and gooey cheese, perfect for a satisfying meal.

Ingredients

  • 2 large sweet potatoes
  • 1 pound ground meat (chicken, turkey, or beef)
  • 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes, pierce each with a fork, rub with olive oil, and sprinkle with salt.
  3. Place sweet potatoes on a baking sheet and roast for 45-60 minutes, until fork-tender.
  4. Heat a splash of olive oil in a skillet over medium heat. Add onion and garlic, cooking until soft, about 3-4 minutes.
  5. Add ground meat to the skillet, break apart, and cook until browned; season with paprika, cumin, salt, and pepper.
  6. Once sweet potatoes are done, cool slightly, slice in half lengthwise, and scoop out some flesh to create a boat.
  7. Mix the sweet potato flesh with the meat mixture, spoon it back into the sweet potato skins.
  8. Top with shredded cheese and return to the oven for another 10-15 minutes, until cheese is melted.
  9. Garnish with fresh herbs if desired, serve warm.

Notes

You can prepare the filling a day in advance and store it in the fridge. For a quicker method, use an air fryer for the sweet potatoes.
