- 4 large apples
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs
- 1/4 cup brown sugar
- 1/4 cup chopped pecans
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
- 2 tablespoons pure maple syrup
- Preheat the oven to 375°F (190°C).
- Wash and core the apples, preserving the bottoms. Slice a small portion off the top of each apple to widen the opening.
- In a medium bowl, combine pumpkin puree, breadcrumbs, brown sugar, chopped pecans, pumpkin pie spice, and cinnamon. Stir until evenly blended.
- Fill each cored apple evenly with the pumpkin mixture.
- Place the stuffed apples upright in a baking dish. Drizzle the melted butter and maple syrup over the top of the apples.
- Pour approximately 1/4 inch of water into the bottom of the baking dish. Bake for 30-40 minutes until apples are tender when pierced with a fork.
- Remove from oven and serve warm.
Notes
- Choose firm apples for best results.
- You can substitute walnuts for pecans if preferred.
- Serve with whipped cream or vanilla ice cream for added sweetness.
