Delicious apples filled with a spiced pumpkin pie filling, perfect for fall.

  • 4 large apples
  • 1 cup pumpkin puree
  • 1/2 cup breadcrumbs
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and core the apples, preserving the bottoms. Slice a small portion off the top of each apple to widen the opening.
  3. In a medium bowl, combine pumpkin puree, breadcrumbs, brown sugar, chopped pecans, pumpkin pie spice, and cinnamon. Stir until evenly blended.
  4. Fill each cored apple evenly with the pumpkin mixture.
  5. Place the stuffed apples upright in a baking dish. Drizzle the melted butter and maple syrup over the top of the apples.
  6. Pour approximately 1/4 inch of water into the bottom of the baking dish. Bake for 30-40 minutes until apples are tender when pierced with a fork.
  7. Remove from oven and serve warm.

Notes

  • Choose firm apples for best results.
  • You can substitute walnuts for pecans if preferred.
  • Serve with whipped cream or vanilla ice cream for added sweetness.
