- 1/2 cup (1 stick) unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 1/4 cup whole milk
- 1 cup quick oats
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1/2 teaspoon vanilla extract
- In a saucepan, melt the butter, granulated sugar, brown sugar, and milk over medium heat. Bring to a boil and let it boil for 1 minute.
- Remove from heat and stir in pumpkin puree, pumpkin spice, and vanilla extract.
- Add the oats and mix until fully combined.
- Drop spoonfuls of the mixture onto wax paper.
- Let them cool and set for at least 30 minutes before serving.
