A refreshing slaw made with vibrant purple cabbage, sweet mango, and tangy cranberries, perfect as a light side dish or topping.

Ingredients

  • 4 cups shredded purple cabbage
  • 1 large mango, peeled and diced
  • ⅓ cup dried cranberries
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro (optional but adds great flavor)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cabbage, mango, cranberries, green onions, and cilantro.
  2. In a small jar or bowl, whisk together olive oil, vinegar, lime juice, honey, salt, and pepper.
  3. Pour the dressing over the slaw and toss well to coat.
  4. Let it chill for at least 15 minutes before serving to let the flavors meld.

Notes

  • For an extra crunch, add nuts like walnuts or almonds.
  • Can be stored in the fridge for up to 2 days.
  • Adjust the sweetness by adding more or less honey as preferred.
