A vibrant and refreshing pasta salad featuring bowtie pasta, peppery arugula, sun-dried tomatoes, and a zesty lemon vinaigrette.

Ingredients

  • 8 oz Bowtie Pasta
  • 4 cups Arugula
  • 1 cup Sun-Dried Tomatoes, chopped
  • 1/2 cup Parmesan Cheese, grated
  • 1 Lemon, juiced
  • 2 cloves Garlic, minced
  • 3 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the Bowtie Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain in a colander and set aside.
  2. Mix the Ingredients: In a large mixing bowl, combine the cooked pasta, arugula, sun-dried tomatoes, and freshly grated Parmesan cheese. Toss gently to avoid crushing the ingredients.
  3. Prepare the Vinaigrette: In a small bowl, whisk together the juice of one fresh lemon, minced garlic, olive oil, salt, and pepper.
  4. Combine and Toss: Pour the vinaigrette over the pasta salad and toss gently until everything is well coated.
  5. Serve or Store: Serve immediately for the best flavors, or refrigerate for an hour to let the flavors meld even further.
