A fast, flavorful taco made with warm chicken, crisp greens, juicy tomatoes, creamy feta, and tzatziki, ready in under 15 minutes.

Ingredients

  • 2 chicken breasts, cooked and diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 small tortillas
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup tzatziki sauce

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add the cooked chicken, paprika, garlic powder, salt, and pepper.
  3. Stir until the chicken is heated through.
  4. Warm the tortillas in another skillet or microwave.
  5. Assemble the tacos by placing a portion of chicken on each tortilla.
  6. Top with mixed greens, cherry tomatoes, and feta cheese.
  7. Drizzle with tzatziki sauce and serve immediately.

Notes

Don’t rush warming the tortillas — a slightly charred edge is lovely. For variations, make them spicy or swap chicken for roasted cauliflower.
