1 cup crushed graham crackers
1 cup confectioners’ sugar
½ cup unsweetened cocoa powder
½ cup unsweetened shredded coconut (optional)
½ cup creamy peanut butter
1 teaspoon pure vanilla extract
1 teaspoon peppermint extract
1 cup semi-sweet chocolate chips (for coating)
1 tablespoon coconut oil (for coating)
Instructions
Prepare a Baking Sheet: Line a baking sheet with parchment paper to prevent sticking.
Mix Dry Ingredients: In a large mixing bowl, combine the crushed graham crackers, confectioners’ sugar, cocoa powder, and shredded coconut (if you’re using it).
Add Wet Ingredients: Add the creamy peanut butter, vanilla extract, and peppermint extract to the dry mixture. Stir until everything is well combined.
Form the Balls: With clean hands, take small portions of the mixture and roll it into balls, about 1-inch in diameter, placing them onto the prepared baking sheet.
Chill the Balls: Once all the balls are formed, place the baking sheet in the fridge for 15-30 minutes to allow them to firm up.
Melt the Chocolate: While the balls are chilling, melt the semi-sweet chocolate chips with the coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring after each until smooth.
Coat the Balls: Once the chocolate is melted, remove the chilled balls from the fridge. Dip each ball into the melted chocolate, coating it evenly, then return it to the baking sheet.
Set the Coating: Place the coated chocolate balls back in the fridge for an additional 15-30 minutes to set the coating.
