Raspberry Macarons are delightful French pastries with a smooth and crisp outer shell and a delicious raspberry buttercream filling.

Ingredients

  • 1 1/2 cups almond flour
  • 2 cups powdered sugar
  • 4 large egg whites
  • 1/2 cup caster sugar
  • 1/2 cup raspberry puree (fresh or frozen)
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Whisk egg whites until frothy; gradually add caster sugar until stiff peaks form.
  3. Sift together almond flour and powdered sugar; gently fold into the meringue mixture.
  4. Transfer batter to a piping bag and pipe small circles onto prepared sheets. Let sit for 30 minutes until they form a skin.
  5. Bake for 15–18 minutes, then cool completely before filling with raspberry buttercream.

Notes

  • Make sure to let the macarons sit before baking to achieve the perfect texture.
  • You can use fresh or frozen raspberries for the puree, just ensure they are well blended.
  • Store macarons in an airtight container to maintain freshness.
