- 12 large eggs
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
- 1/4 cup finely chopped chives
- 1/2 cup shredded cheese
- Cherry tomatoes or red bell pepper pieces for decorations
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Separate the eggs, placing the whites in one bowl and yolks in another.
- Beat the egg yolks until smooth, then mix in mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the batter.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 15-18 minutes, or until the cake springs back when lightly touched.
- While the cake is baking, prepare the filling by mixing chopped chives and shredded cheese.
- Once baked, invert the cake onto a clean kitchen towel dusted with powdered sugar and carefully peel off the parchment paper.
- Spread the filling evenly over the cake and roll it up gently from the short end to create the swirl.
- Decorate the roll with cherry tomatoes or red bell pepper pieces to create a festive appearance.
- Chill in the refrigerator for at least 1 hour before serving.

- Ensure not to overmix the batter to keep it fluffy.
- Can be made a day ahead, just store in the refrigerator.
