A festive and delightful Raspberry Swirl Christmas Roll that will impress your guests.

Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste
  • 1/4 cup finely chopped chives
  • 1/2 cup shredded cheese
  • Cherry tomatoes or red bell pepper pieces for decorations

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Separate the eggs, placing the whites in one bowl and yolks in another.
  3. Beat the egg yolks until smooth, then mix in mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the batter.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 15-18 minutes, or until the cake springs back when lightly touched.
  8. While the cake is baking, prepare the filling by mixing chopped chives and shredded cheese.
  9. Once baked, invert the cake onto a clean kitchen towel dusted with powdered sugar and carefully peel off the parchment paper.
  10. Spread the filling evenly over the cake and roll it up gently from the short end to create the swirl.
  11. Decorate the roll with cherry tomatoes or red bell pepper pieces to create a festive appearance.
  12. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Ensure not to overmix the batter to keep it fluffy.
  • Can be made a day ahead, just store in the refrigerator.
