4 slices thick-cut brioche or sourdough bread
2 tablespoons unsalted butter, softened
1/4 cup canned pumpkin puree
1/4 teaspoon pumpkin pie spice
1/2 teaspoon maple syrup
Pinch of salt
4 slices sharp white cheddar cheese
2 slices creamy Havarti or mozzarella cheese
2 cups cream soda, chilled
2 scoops vanilla ice cream
Ground cinnamon or nutmeg, for garnish (optional)
Instructions
In a small mixing bowl, combine the pumpkin puree, pumpkin pie spice, maple syrup, and a pinch of salt. Stir until smooth and well blended.
Spread the pumpkin mixture evenly onto two slices of bread. Layer each with 2 slices of sharp white cheddar and 1 slice of Havarti or mozzarella. Top with the remaining bread slices to form sandwiches.
Spread the softened butter onto the outside surfaces of each sandwich. Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and grill for 3 to 4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
Pour 1 cup of chilled cream soda into each tall glass. Add a scoop of vanilla ice cream to each glass. Garnish with a pinch of ground cinnamon or nutmeg, if desired.
Serve the hot grilled cheese sandwiches alongside the cream soda floats immediately.
