These luscious Red Velvet Cookie Bars combine the classic flavors of red velvet cake with the gooey, soft texture of cookie bars, perfect for any occasion.

  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Red food coloring (optional)
  • White chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Sift together the flour, cocoa powder, baking soda, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture.
  6. Add red food coloring until the desired color is achieved.
  7. Pour the batter into the greased pan and spread it evenly.
  8. Sprinkle white chocolate chips over the top if desired.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let them cool completely before slicing into bars.
