2 fresh jalapeños
8 oz cream cheese, softened
0.5 cup sour cream
1 cup shredded sharp cheddar cheese
0.5 cup cooked bacon, crumbled
0.5 cup corn (fresh, canned, or thawed frozen)
0.25 cup chopped green onions
1 oz ranch seasoning mix (1 packet)
Salt and pepper to taste
Instructions
Set your oven to broil. Place the jalapeños on a foil-lined baking sheet and broil for 5-7 minutes, turning once, until the skins are blistered. Let cool, then peel, deseed if needed, and finely chop.
In a mixing bowl, blend the cream cheese, sour cream, and ranch seasoning until smooth and fluffy.
Fold in the chopped roasted jalapeños, cheddar cheese, bacon, corn, and green onions. Add salt and pepper to taste.
(Optional) Preheat oven to 375°F (190°C). Transfer the mixture to a baking dish and bake for 15-20 minutes until bubbly and golden.
Serve warm with crackers, chips, or veggies—or chill and use as a spread.
Notes
Remove the jalapeño seeds if you prefer a milder dip.
This dip is great both warm and cold, depending on the occasion.
Add a splash of lime juice for a citrusy twist or extra heat with diced serrano.
