A comforting and vibrant pasta dish featuring roasted vegetables and creamy feta cheese, perfect for any occasion.

  • 8 oz Pasta (penne or fusilli)
  • 1 Zucchini, diced
  • 1 Bell Pepper (red or yellow), diced
  • 1 Red Onion, diced
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Fresh Spinach
  • 4 oz Feta Cheese, crumbled
  • 3 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste
  • Fresh Basil (optional), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, minced garlic, salt, and pepper.
  3. Spread the coated vegetables on a baking sheet in a single layer.
  4. Roast for 20-25 minutes, or until tender and slightly charred.
  5. Bring a large pot of salted water to a boil, then add the pasta and cook until al dente.
  6. Combine the cooked pasta with the roasted vegetables and fresh spinach in a large mixing bowl.
  7. Crumble feta cheese over the top and gently toss everything together.
  8. Serve warm, garnished with fresh basil if desired.
