8 breakfast sausage links or patties
1 1/2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 1/4 cups milk
1 large egg
2 tbsp melted butter or vegetable oil
1 tsp vanilla extract
Butter or oil, for cooking
Instructions
Cook the sausage links or patties in a skillet over medium heat until fully cooked. Set aside and keep warm.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, combine milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined; batter should be slightly lumpy. Do not overmix.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of pancake batter onto the skillet. Quickly place a cooked sausage link or patty in the center of the batter.
Using a spatula, gently fold the edges of the batter around the sausage, covering it completely. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Carefully flip and cook the other side until golden brown, about 2 more minutes.
Repeat with remaining batter and sausages. Serve warm with syrup, mustard, or your favorite dipping sauce.
Notes
For a crispier texture, cook the sausages slightly longer before adding to the batter.
