Sausage Egg Breakfast Rolls are a delightful combination of scrambled eggs, savory sausage, and melted cheddar cheese wrapped in flaky puff pastry, making for an ideal breakfast treat.

  • 2 sheets puff pastry, thawed
  • 6 large eggs
  • 6 sausage patties, cooked
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. Cook the sausage patties in a skillet over medium heat until browned and cooked through. Set aside on paper towels to drain.
  2. Whisk the eggs with salt and pepper. Scramble them in a skillet over medium-low heat until just barely set and still glossy. Remove from heat.
  3. Roll out the puff pastry on a floured surface and cut each sheet into three equal rectangles.
  4. Place a spoonful of scrambled eggs in the center of each rectangle, top with a sausage patty, and sprinkle with cheddar cheese.
  5. Fold the pastry over the filling, tucking in the sides, and roll like a burrito. Place seam-side down on a parchment-lined baking sheet.
  6. Brush the tops with the beaten egg for a golden finish.
  7. Bake in a preheated 400°F (200°C) oven for 20–25 minutes until golden brown and puffed. Let cool for 5 minutes before serving.

  • Make sure the puff pastry is fully thawed before rolling.
  • You can customize the filling with other ingredients like vegetables or different cheeses.
