Sausage Egg and Cheese Breakfast Roll-Ups are a delicious and easy breakfast option that can be made ahead of time.

  • 8 large eggs
  • Salt and pepper to taste
  • 1 tablespoon milk
  • 1 tablespoon butter
  • 8 breakfast sausage links
  • 8 flour tortillas (8-inch size)
  • 1 cup shredded cheddar cheese
  • Cooking spray

Instructions

  1. In a bowl, whisk together the eggs, salt, pepper, and milk until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter. Pour in the egg mixture and scramble until just set. Remove from heat and set aside.
  3. In another skillet, cook the sausage links over medium heat until browned and cooked through. Remove from heat and set aside.
  4. Lightly spray a clean skillet with cooking spray and warm it over medium heat.
  5. To assemble, lay an 8-inch flour tortilla flat and add a spoonful of scrambled eggs in the center.
  6. Place a cooked sausage link on top of the eggs.
  7. Sprinkle with some shredded cheddar cheese.
  8. Roll up the tortilla tightly to enclose the filling.
  9. Place the roll-up seam-side down in the pre-heated skillet and cook for 2-3 minutes, or until the tortilla is golden and slightly crisp. Flip and cook the other side for an additional 2-3 minutes.
  10. Remove from skillet and let cool slightly before serving.
  11. Repeat with the remaining tortillas and filling.

Notes

  • For added flavor, add chopped scallions or bell peppers to the scrambled eggs.
  • Use different cheeses like Monterey Jack or pepper jack for a variation.
  • These roll-ups can be made ahead, wrapped in foil, and reheated in the oven or microwave.
