  • 1 lb baby potatoes, halved or quartered
  • 8 oz green beans, washed and trimmed
  • 1 small yellow onion, sliced or cut into wedges (approximately 1 cup)
  • 1 lb pre-cooked andouille sausage or kielbasa, sliced 1 inch on the bias
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning blend
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Halve or quarter the baby potatoes into uniform pieces. Wash and trim green beans. Slice the yellow onion into wedges or thin slices. Cut sausage into 1-inch diagonal slices.
  2. Combine garlic powder, salt, Italian seasoning, and ground black pepper in a small bowl.
  3. Place potatoes, green beans, onion, and sausage into a large mixing bowl.
  4. Drizzle olive oil over the mixture, then sprinkle the seasoning blend. Toss thoroughly to ensure an even coating on all ingredients.
  5. Line a baking sheet with parchment paper and spread the sausage and vegetable mixture in a single, even layer.
  6. Bake in a preheated oven at 400°F for 30 to 40 minutes, stirring halfway through to promote browning, until potatoes are tender and vegetables are lightly caramelized.
  7. Transfer to serving plates and garnish with chopped fresh parsley.
