Sausage Potato Soup is a comforting and hearty dish made with ground Italian sausage, red potatoes, and a creamy broth, perfect for warming up on a chilly day.

Ingredients

  • 1 lb. ground Italian sausage, hot or mild
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • ½ cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 ¼ lbs. red potatoes, about 6 small potatoes
  • 2 teaspoons dried basil
  • ½ teaspoon EACH: dried parsley, oregano, mustard powder
  • ¼ teaspoon pepper
  • 2 cups shredded cheddar cheese, optional

Instructions

  1. Remove the casings from the sausage if using links. Preheat a large pot over medium heat and add the sausage, cooking and crumbling until halfway cooked, about 6 minutes. Cover partially and cook until fully cooked, around 10-12 minutes total. Set aside and reserve 1 tablespoon drippings.
  2. Add the reserved drippings and 2 tablespoons of butter to the pot over medium heat. Add diced onions, celery, and carrots; cook for 5 minutes. Add garlic and cook for 1 minute.
  3. Add flour to the pot and cook for 2 minutes. Slowly pour in chicken broth, scraping the bottom of the pot to enhance flavor.
  4. Stir in heavy cream, hot sauce, soy sauce, and seasonings, then bring to a boil, reduce to a simmer.
  5. Clean and cube the potatoes, then add to the pot. Simmer uncovered until potatoes are fork-tender, about 20-25 minutes.
  6. Stir in the cooked sausage and reduce heat to low. If desired, stir in cheddar cheese before serving.
