1 pound fresh sausage (Italian or breakfast sausage)
1 cup warm water (110°F to 115°F)
2 tablespoons granulated sugar
2 teaspoons active dry yeast
4 cups all-purpose flour
1 teaspoon salt
1/2 cup baking soda
1 large egg, beaten
Coarse sea salt, for sprinkling
Instructions
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes, or until frothy.
Add the flour and salt to the yeast mixture, and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
While the dough is rising, cook the sausage in a skillet over medium heat until browned and cooked through. Drain any excess fat and let it cool slightly.
Once the dough has risen, punch it down and divide it into small pieces (about the size of a golf ball). Flatten each piece and place a small amount of cooked sausage in the center. Fold the dough over the sausage and pinch to seal.
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop the pretzel bites into the boiling water in batches, cooking for about 30 seconds on each side. Remove with a slotted spoon and place on the prepared baking sheet.
Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt.
Bake for 12-15 minutes, or until golden brown. Serve warm with your favorite dipping sauce.
