1 pound Italian sausage, casings removed
2 cups fresh spinach, chopped
1 cup ricotta cheese
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional)
Fresh basil for garnish
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, or until the spinach is wilted. Season with Italian seasoning, salt, pepper, and red pepper flakes if using.
In a mixing bowl, combine the ricotta cheese with half of the Parmesan cheese and a pinch of salt and pepper. Mix until well combined.
Spread half of the marinara sauce on the bottom of a baking dish. Layer half of the sausage and spinach mixture over the sauce, followed by dollops of the ricotta mixture. Repeat the layers with the remaining marinara sauce, sausage mixture, and ricotta.
Top the final layer with shredded mozzarella cheese and the remaining Parmesan cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Notes
Serve with fresh basil for added flavor.
This dish can be made ahead of time and baked just before serving.
