  • 1 wheel of Brie cheese (about 8 ounces)
  • 1 cup unsalted roasted pistachios, shelled and chopped
  • 1/4 cup honey
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 package of puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)
  • Fresh cranberries or pomegranate seeds (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the pistachio mixture: In a mixing bowl, combine the chopped pistachios, honey, rosemary, sea salt, and black pepper. Mix well until the ingredients are evenly combined.
  3. Roll out the puff pastry: Unroll the sheets of puff pastry on a lightly floured surface. If needed, roll them out slightly to smooth any creases. Cut each sheet into squares (about 3×3 inches) to create bite-sized pastries.
  4. Assemble the Brie bites: Place a small piece of Brie cheese (approximately 1 ounce) in the center of each puff pastry square. Top each piece of Brie with 1-2 teaspoons of the pistachio mixture.
  5. Wrap the Brie: Carefully fold the corners of the pastry over the Brie and pistachio topping, pinching the seams together to seal the bites tightly.
  6. Egg wash: Brush the tops of the pastry bites with the beaten egg to give them a beautiful golden color when baked.
