A comforting dish of creamy red beans served over fluffy rice, enhanced with smoked sausage and Cajun seasoning.

Ingredients

  • 1 cup red beans
  • 1 cup rice
  • 1 tablespoon Cajun seasoning
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Rinse the red beans under cold water, then soak them overnight in a bowl of water.
  2. Cook the sliced sausage over medium heat until browned.
  3. Sauté the chopped onion and minced garlic until the onion becomes translucent.
  4. Add the soaked red beans along with Cajun seasoning.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Simmer for about 1 hour, until the beans are tender.
  7. Cook the rice according to package instructions.
  8. Serve the red beans over the fluffy rice, garnished with green onions if desired.

Notes

Can be made ahead and stores well; consider using canned beans for quicker preparation.
