2 cups shredded rotisserie chicken
8 soft tortillas
2 cups enchilada sauce
2 cups shredded cheese (cheddar or Mexican blend)
1/2 cup chopped onion (optional)
1/2 cup sour cream (optional, for serving)
Fresh cilantro (for garnish)
Instructions
Preheat the oven to 375°F (190°C), allowing it to warm up while you prepare your ingredients.
Mix the ingredients: In a large mixing bowl, combine the shredded rotisserie chicken with 1 cup of enchilada sauce. Add the chopped onion if you’re including it.
Assemble the enchiladas: Take a tortilla and spoon some of the chicken mixture into the center. Roll it up gently and place it seam-side down in your baking dish.
Pour the rest of the enchilada sauce over the top. Sprinkle the remaining shredded cheese across the surface.
Bake: Slide the dish into the preheated oven and bake for 20-25 minutes, until the cheese turns golden brown and bubbly.
Chill before serving: Let them cool in the dish for a few minutes.
Finish with garnish: Top each serving with a dollop of sour cream and a sprinkle of fresh cilantro.
