Hearty enchiladas filled with rotisserie chicken and topped with cheese, perfect for a comforting dinner.

  • 2 cups shredded rotisserie chicken
  • 8 soft tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onion (optional)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C), allowing it to warm up while you prepare your ingredients.
  2. Mix the ingredients: In a large mixing bowl, combine the shredded rotisserie chicken with 1 cup of enchilada sauce. Add the chopped onion if you’re including it.
  3. Assemble the enchiladas: Take a tortilla and spoon some of the chicken mixture into the center. Roll it up gently and place it seam-side down in your baking dish.
  4. Pour the rest of the enchilada sauce over the top. Sprinkle the remaining shredded cheese across the surface.
  5. Bake: Slide the dish into the preheated oven and bake for 20-25 minutes, until the cheese turns golden brown and bubbly.
  6. Chill before serving: Let them cool in the dish for a few minutes.
  7. Finish with garnish: Top each serving with a dollop of sour cream and a sprinkle of fresh cilantro.
