A creamy and flavorful slow cooker pasta dish featuring Cajun-seasoned chicken, peppers, and a delicious cheese sauce.

  • 1 ½ pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • ½ yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Optional garnish: fresh parsley, extra Parmesan, crushed red pepper flakes

Instructions

  1. Rub chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper. (Optional: marinate 15-20 minutes).
  2. Place chicken, sliced peppers, onion, and broth into slow cooker. Cook on low 6–7 hours or high 3–4 hours.
  3. Remove chicken, shred, return to slow cooker.
  4. Add cream cheese and Parmesan, stir until melted and creamy. Cook an additional 10–15 minutes.
  5. Cook pasta separately until al dente, drain. Stir pasta into slow cooker mixture.
  6. Serve hot, garnished as desired.

Notes

  • For more heat, increase Cajun seasoning or add crushed red pepper flakes.
  • Use chicken thighs for juicier meat.
  • Cook pasta separately to avoid mushiness.
