A comforting slow cooker dish featuring penne pasta enveloped in creamy cheese sauce with tender shredded chicken and seasoned tomatoes, perfect for family dinners.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 cups penne pasta
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Layer in the chicken by placing the chicken breasts at the bottom of the slow cooker.
  2. Add the cream of chicken soup over the chicken, followed by the chicken broth.
  3. Season generously with Italian seasoning, garlic powder, salt, and pepper.
  4. The slow cooking magic begins! Set your slow cooker to low and cook for about 4 hours or until the chicken is tender.
  5. Shred the chicken right in the slow cooker using a meat shredder or forks.
  6. Stir in the cooked penne pasta, diced tomatoes, cheddar, and mozzarella cheese.
  7. Allow the dish to cook for an additional 30 minutes on low, enabling the cheese to melt.
  8. Serve and garnish with freshly chopped parsley.

Notes

Try substituting the penne with whole grain or gluten-free options and the cream of chicken soup with a lighter version for a healthier dish.
