4 Italian sausages (choose mild or spicy)
2 bell peppers (one red and one yellow), sliced
1 large onion, sliced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, with juice
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
Arrange the Italian sausages at the bottom of your slow cooker.
Add the sliced bell peppers and onions on top of the sausages.
In a bowl, combine the minced garlic, diced tomatoes with juice, Italian seasoning, red pepper flakes (if desired), salt, and pepper. Pour over the sausages and vegetables.
Cover the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until sausages are fully cooked and vegetables are tender.
After cooking, gently stir the contents. Serve warm, topped with fresh basil or parsley, if you wish.
Notes
For a spicier dish, use spicy Italian sausages.
Can substitute vegetables based on preference.
Serve with crusty bread or over rice for a complete meal.
