- 1 1/2 cups warm water (110°F/45°C)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 2 teaspoons salt
- 2 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 large egg, beaten (for egg wash)
- Coarse sea salt, for topping
- In a mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter. Mix until a dough forms, then knead for 5–7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
- Preheat oven to 450°F (230°C) and line baking sheets with parchment paper.
- Bring 10 cups of water and baking soda to a boil in a large pot.
- Punch down the dough and cut into 8 equal pieces. Roll each into a rope and cut into 1-inch bite-sized pieces.
- Drop a handful of dough bites into the boiling water for 30 seconds, then remove with a slotted spoon and place on prepared baking sheets.
- Brush each with egg wash, sprinkle with coarse salt, and bake for 12–14 minutes, or until golden brown.
- Serve warm with cheese dip, mustard, or your favorite sauce.
Notes
- For a crispier pretzel, bake for an additional minute or two.
- These bites are best served warm, but can be reheated in a microwave or oven.
