A delicious creamy spaghetti dish with chicken, pancetta, and Parmesan.

Ingredients

  • 3 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 12 oz spaghetti
  • 2 boneless, skinless chicken breasts, diced
  • 4 oz pancetta or bacon, chopped
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream (optional for extra creaminess)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • Extra Parmesan for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until golden brown, about 5–6 minutes. Remove and set aside.
  3. In the same skillet, cook pancetta or bacon until crispy. Add garlic and red pepper flakes, cooking for another minute.
  4. In a bowl, whisk together eggs, Parmesan, black pepper, and heavy cream (if using).
  5. Return spaghetti and chicken to the skillet, then remove from heat. Slowly pour in the egg mixture, tossing quickly to coat without scrambling the eggs.
  6. Add small amounts of reserved pasta water as needed to create a silky sauce.
  7. Garnish with fresh parsley and extra Parmesan before serving.

Notes

  • Make sure to reserve pasta water before draining spaghetti for the creamy sauce.
  • Adjust the amount of red pepper flakes according to your spice preference.
