2 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon smoked paprika
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1 teaspoon salt
2 garlic cloves, minced
Juice of 1 lemon
1 large cucumber, diced
2 medium tomatoes, diced
1 small red onion, thinly sliced
3.5 ounces mixed salad greens
2 tablespoons fresh parsley, chopped
7 ounces plain Greek yogurt
1 tablespoon olive oil
Juice of 1/2 lemon
1 garlic clove, minced
1/2 teaspoon ground cumin
Salt and pepper to taste
Instructions
Prepare the Spice Marinade: Combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, black pepper, salt, minced garlic, and lemon juice in a bowl and mix thoroughly.
Marinate the Chicken: Add chicken to the spice mixture and coat evenly. Allow to marinate for a minimum of 15 minutes, extending up to 2 hours for enhanced flavor development.
Sear the Chicken: Heat a grill pan or skillet over medium-high heat. Cook marinated chicken for 5 to 7 minutes per side until fully cooked with light charring. Rest for 5 minutes, then slice thinly.
Assemble the Salad Base: Combine cucumber, tomatoes, red onion, salad greens, and fresh parsley in a large bowl.
Prepare the Yogurt Dressing: Whisk together Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper until smooth and well combined.
Compose and Serve: Divide salad mixture among serving plates, arrange sliced chicken on top, and drizzle generously with yogurt dressing.
Notes
For added flavor, marinate the chicken for longer if time allows.
You can use any mixed salad greens of your choice.
