  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon neutral oil (like vegetable or canola)
  • 1 cup spicy salmon (spicy mayo mixed with fresh salmon)
  • 1 small cucumber, thinly sliced
  • 1/2 cup edamame, shelled
  • Spicy mayo for drizzling on top

  1. Mix the sushi rice: In a bowl, combine the cooked sushi rice, rice vinegar, sugar, and salt. Let it sit for about 5 minutes.
  2. Heat the oil: Heat neutral oil in a non-stick skillet over medium heat.
  3. Form the base: Scoop the sushi rice mixture into the skillet, pressing it down to form a round pizza crust.
  4. Crisp up: Cook until golden brown on one side (about 4-5 minutes), then flip to cook the other side.
  5. Top it off: Layer spicy salmon, cucumber slices, and edamame on the crispy base, then drizzle with spicy mayo.
  6. Slice and serve: Use a sharp knife to slice the pizza and serve it hot or at room temperature.
