A comforting and flavorful soup with shrimp, rice noodles, and a spicy broth infused with garlic, ginger, and jalapeños.

Ingredients

  • 1 lb fresh or frozen shrimp
  • 8 oz rice noodles
  • 2 fresh jalapeños, sliced
  • 2 tbsp chili oil
  • 4 cups chicken or vegetable broth
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 2 green onions, chopped
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat the chili oil in a large pot over medium heat.
  2. Sauté the minced garlic and ginger until fragrant.
  3. Add the broth and bring to a gentle simmer.
  4. Stir in the sliced jalapeños and soy sauce, letting it simmer for 5 minutes.
  5. Mix in the shrimp and cook until pink and opaque, about 2 minutes.
  6. Cook the rice noodles according to package instructions, then drain and set aside.
  7. Divide the cooked noodles into serving bowls.
  8. Ladle the shrimp and broth mixture over the noodles.
  9. Garnish with chopped green onions and cilantro.
  10. Serve hot and enjoy!
