2 tablespoons olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
8 cups fresh spinach, washed and dried
Salt and pepper to taste
1 tablespoon balsamic vinegar (optional)
1/4 teaspoon red pepper flakes (optional)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized.
Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Add the fresh spinach to the skillet, tossing it with the onions and garlic. Cook for 3-5 minutes, or until the spinach is wilted.
Season with salt, pepper, and balsamic vinegar if using. For a bit of heat, sprinkle in the red pepper flakes. Toss everything together and cook for another minute.
Remove from heat and serve warm as a delicious side dish.
Notes
For a healthier option, you can omit the balsamic vinegar and red pepper flakes.
