A flavorful side dish featuring fresh spinach sautéed with caramelized onions and garlic.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 cups fresh spinach, washed and dried
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized.
  2. Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the fresh spinach to the skillet, tossing it with the onions and garlic. Cook for 3-5 minutes, or until the spinach is wilted.
  4. Season with salt, pepper, and balsamic vinegar if using. For a bit of heat, sprinkle in the red pepper flakes. Toss everything together and cook for another minute.
  5. Remove from heat and serve warm as a delicious side dish.

Notes

  • For a healthier option, you can omit the balsamic vinegar and red pepper flakes.
  • This dish can be served warm or at room temperature.
