Delicious fish fillets filled with a creamy spinach and cheese mixture, providing a satisfying crunch and flavorful experience.

  • 4 fish fillets (such as tilapia or cod)
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine chopped spinach, softened cream cheese, shredded cheese, salt, and pepper in a mixing bowl. Mix well until fully blended.
  2. Lay out the fish fillets on a flat surface. Scoop a generous portion of the spinach-cheese mixture onto one side of each fillet and fold the fillet over the filling.
  3. Dip each stuffed fillet into the beaten eggs, followed by the breadcrumbs, pressing gently to adhere.
  4. Heat oil in a non-stick frying pan over medium-high heat and add the stuffed fillets. Fry for about 4-5 minutes on each side until golden brown and cooked through.
  5. Remove the fillets from the pan and drain on paper towels. Serve immediately.

Notes

Make-ahead tip: Prepare the filling a day in advance. For a healthier option, bake instead of frying at 375°F (190°C) for 20-25 minutes.
