Deliciously stuffed mushrooms filled with a creamy spinach dip mixture, perfect for any gathering.

  • 16 large mushrooms, stems removed
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine cream cheese, sour cream, Parmesan cheese, mozzarella cheese, onion powder, salt, and black pepper. Stir in the cooked spinach mixture until well combined.
  5. Stuff each mushroom cap generously with the spinach dip mixture and place them on a baking sheet.
  6. Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  7. Garnish with fresh parsley before serving.

  • Ensure mushrooms are cleaned properly before use.
  • Can substitute low-fat cream cheese for a lighter version.
