4 slices whole wheat bread
3 large egg whites
1 cup fresh spinach
1/2 cup low-fat feta cheese, crumbled
2 tablespoons unsalted butter, softened
Instructions
In a nonstick pan over medium heat, scramble egg whites with spinach until eggs are set and spinach is wilted.
Layer scrambled egg and spinach mixture and the feta cheese evenly between two slices of whole wheat bread. Top with the remaining bread slices to form sandwiches.
Spread unsalted butter over the outer sides of each sandwich. Place in a preheated nonstick pan and cook on both sides until bread is golden and crisp and cheese is warmed through, about 3–4 minutes per side.
Notes
Adjust the amount of feta cheese to taste.
For an extra crunch, add sliced tomatoes or avocado.
