A refreshing Spinach Pasta Salad packed with vibrant flavors and fresh ingredients, perfect for a light meal or side dish.

Ingredients

  • 8 ounces pasta (fusilli or penne)
  • 4 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the chopped spinach, cherry tomatoes, cucumber, red onion, feta cheese, and black olives.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

  • For added protein, you can include grilled chicken or chickpeas.
  • This salad can be made a day in advance; however, fresh spinach may wilt over time.
  • Feel free to substitute any of the vegetables according to your preference.
