- 8 ounces pasta (fusilli or penne)
- 4 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the chopped spinach, cherry tomatoes, cucumber, red onion, feta cheese, and black olives.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
- Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
Notes
- For added protein, you can include grilled chicken or chickpeas.
- This salad can be made a day in advance; however, fresh spinach may wilt over time.
- Feel free to substitute any of the vegetables according to your preference.
