  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cups spinach or mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Cook your grains: Start by cooking quinoa or brown rice following package instructions.
