Sticky Pineapple Pork Bowls

Quick bowls of seared pork with pineapple and a glossy honey-soy glaze, served over rice — ready in about 20 minutes.

Ingredients

  • 1 lb pork tenderloin, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1/2 onion, sliced
  • Cooked rice, for serving
  • Green onions, for garnish

Instructions

  1. Combine soy sauce, honey, and cornstarch in a bowl. Mix well.
  2. Heat vegetable oil in a skillet over medium-high heat.
  3. Add sliced pork and cook until browned.
  4. Add onion and bell pepper, cooking until softened.
  5. Stir in pineapple and the soy sauce mixture. Cook until thickened, about 2-3 minutes.
  6. Serve over cooked rice and garnish with green onions.

Notes

Stir often so the sauce doesn’t stick to the pan. The sauce thickens more as it cools, so aim for slightly looser while cooking.
