2 cups whole milk
1 cup heavy cream
2/3 cup granulated sugar
1 tsp pure vanilla extract
4 large egg yolks
3.5 oz (100 g) dark chocolate, finely chopped or shaved
Pinch of salt
Instructions
In a medium saucepan, combine milk, cream, and half of the sugar. Heat over medium heat until warm but not boiling.
In a separate bowl, whisk egg yolks with the remaining sugar until pale and slightly thickened.
Slowly temper the egg yolks by pouring a small amount of the warm milk mixture into the yolks while whisking constantly. Repeat until yolks are warmed.
Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (do not boil).
Remove from heat and stir in vanilla extract and a pinch of salt. Let cool to room temperature, then refrigerate for at least 2 hours or overnight.
Churn in an ice cream maker according to manufacturer’s instructions until it reaches a soft-serve consistency.
Gradually add the finely chopped chocolate during the last 5 minutes of churning so it spreads evenly in thin shards.
Transfer gelato to a container and freeze for at least 2 hours before serving for a firmer texture.
Notes
For best texture, serve after freezing for at least 2 hours.
Use high-quality dark chocolate for the best flavor.
This recipe can be made ahead of time and stored in the freezer.
