  • 1 cup (240 ml) graham cracker crumbs
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter
  • 8 oz (227 g) cream cheese
  • 1/2 cup (120 ml) heavy cream
  • 1/3 cup (40 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (150 g) fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and granulated sugar until well combined.
  3. Pour in melted butter and mix until crumbs resemble wet sand.
  4. Press the mixture firmly into the bottom of a lined 9×9-inch baking pan.
  5. Bake for 8-10 minutes until edges lightly brown, then cool completely.
  6. Beat softened cream cheese with an electric mixer until smooth, about 2-3 minutes.
  7. Gradually add powdered sugar and mix until fully incorporated.
  8. Add vanilla extract and mix again until combined.
  9. Whip heavy cream in a separate bowl until soft peaks form.
  10. Gently fold whipped cream into the cream cheese mixture until combined.
  11. Pour cheesecake filling over the cooled crust and spread evenly.
  12. Arrange sliced strawberries on top, pressing them gently into the filling.
  13. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  14. Mix remaining graham cracker crumbs with melted butter and a sprinkle of sugar.
  15. Sprinkle the crunchy topping over the chilled cheesecake before serving.
  16. Slice into small squares or rectangles and serve chilled.
