Ingredients
Scale
1/2 cup unsalted butter (melted)
3/4 cup granulated sugar
1 large egg
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup fresh strawberries (diced)
1 tablespoon flour (for tossing strawberries)
Optional Glaze: 1/2 cup powdered sugar
Optional Glaze: 1–2 tablespoons lemon juice
Instructions
Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or grease it well to prevent sticking.
In a mixing bowl, whisk together melted butter and granulated sugar until smooth. Then add the egg, lemon juice, lemon zest, and vanilla extract, mixing thoroughly.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Toss the diced strawberries with 1 tablespoon of flour. Gently fold the floured strawberries into the batter.
Spread the batter evenly in the prepared pan and bake for 25–30 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs.
Allow the blondies to cool completely in the pan.
For the optional glaze, whisk powdered sugar with 1 to 2 tablespoons of lemon juice until smooth, then drizzle over the cooled blondies before serving.
Notes
Be careful not to overmix the batter to keep the blondies tender.
Using fresh strawberries is recommended for the best flavor.
The optional glaze adds a lovely lemony flavor that enhances the dessert.
