  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Creaming together the softened butter, sugar, and brown sugar until smooth and fluffy.
  3. Add the eggs and vanilla extract, beating until fully combined.
  4. Mix the flour, baking powder, baking soda, and salt in another bowl.
  5. Blend the dry mixture into the wet mixture until combined.
  6. Add the lemon zest, lemon juice, and crushed freeze-dried strawberries.
  7. Scoop tablespoon-sized portions of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Cool on baking sheets before transferring to wire racks.
