A delightful twist on classic cookies, bursting with the flavors of summer through fresh strawberries and zesty lemon.

  • 1 large egg
  • 1 teaspoon lemon zest (grated peel from a lemon)
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg, lemon zest, and lemon juice until well blended.
  4. Stir in the pureed strawberries until fully incorporated.
  5. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the strawberry mixture, stirring often.
  7. Drop tablespoonfuls of dough onto a parchment-lined baking sheet, leaving space between them.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Allow cookies to cool on a wire rack for 5-10 minutes and dust with powdered sugar if desired.

Notes

Use fresh strawberries if possible and do not overmix the dough to avoid tough cookies.
