Delicious and chewy cookies made with sweet Medjool dates, perfect for any occasion.

  • 1 cup Medjool dates (pitted and chopped)
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans (chopped, optional)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soak the chopped dates in warm water for about 10 minutes, then drain.
  3. In a mixing bowl, cream together the softened butter and brown sugar until fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Mash the soaked dates and add them to the wet mixture, stirring until combined.
  7. Gradually incorporate the dry ingredients, folding in the nuts if using.
  8. Drop rounded tablespoons of dough onto a baking sheet, spaced 2 inches apart.
  9. Bake for 10-12 minutes or until golden brown around the edges.
  10. Allow to cool on the baking sheet before transferring to a wire rack.
