- 1/2 cup unsalted butter (softened)
- 1/4 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or whole wheat)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup walnuts or pecans (chopped, optional)
- 1/2 teaspoon cinnamon
- Preheat your oven to 350°F (175°C).
- Soak the chopped dates in warm water for about 10 minutes, then drain.
- In a mixing bowl, cream together the softened butter and brown sugar until fluffy.
- Add the egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Mash the soaked dates and add them to the wet mixture, stirring until combined.
- Gradually incorporate the dry ingredients, folding in the nuts if using.
- Drop rounded tablespoons of dough onto a baking sheet, spaced 2 inches apart.
- Bake for 10-12 minutes or until golden brown around the edges.
- Allow to cool on the baking sheet before transferring to a wire rack.
