- 3 medium sweet potatoes, peeled and diced into 1-inch pieces
- 1 pound green beans, ends trimmed
- 3 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and freshly ground pepper to taste
- 1 tablespoon freshly squeezed lemon juice
- 1/4 cup grated Parmesan cheese (optional)
- Preheat oven to 425°F (220°C).
- In a large bowl, combine sweet potatoes and green beans.
- Drizzle with olive oil, then add garlic powder, onion powder, smoked paprika, salt, pepper, and lemon juice. Toss to coat.
- Spread mixture on a baking tray in a single layer.
- Roast for 25-30 minutes, stirring halfway, until sweet potatoes are golden and tender.
- If using Parmesan, sprinkle it over the vegetables in the last 5 minutes of roasting.
- Serve warm and enjoy!
