- 4 boneless, skinless chicken breasts
- 1 cup diced fresh mango
- 1 cup pineapple chunks (plus more for garnish)
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 2 tbsp honey
- Juice of 1 lime
- 2 tbsp soy sauce
- 2 tbsp olive oil
- Fresh cilantro or mint for garnish
- Make the marinade: Blend mango, pineapple, garlic, paprika, honey, lime juice, soy sauce, and olive oil until smooth.
- Marinate the chicken: Pour the marinade over chicken in a bag or dish. Refrigerate 30 minutes to 4 hours.
- Preheat grill: Heat to medium-high and oil the grates.
- Grill the chicken: Cook chicken for 6-7 minutes per side until internal temp reaches 165°F.
- Make glaze: Simmer reserved marinade (not used on raw chicken) until thickened.
- Glaze and finish: Brush glaze on chicken during the last few minutes of grilling.
